Rainy day activity...

So today’s been the first yucky day in a while and we’re stuck indoors…what to do??? BAKE :-) So I was trying to think of something quick to make that the girls could help with…I had stumbled across this recipe a while back but had forgotten about it until today. Chocolate Chip Cookies…but, that’s not the cool part…the recipe is minaturized (is that a word?) scaled down so to speak, and it will only make 4, yep, that’s right, it will only make 4 chocolate chip cookies! Perfect :-) If I wasn’t trying to watch it, I would have made a regular batch, probably would have doubled it, and then be feeling hopelessly guilty right now for consuming most of it…but that’s just me ;-) So, if you aren’t worried about fitting into your jeans, then this recipe might not be for you because you will want more!

1/4 cup + 1 tablespoon flour
1/8 teaspoon baking soda
A pinch of salt
A pinch of cinnamon
2 tablespoons shortening
2 tablespoons brown sugar
1 tablespoon granulated sugar
1 tablespoon beaten egg
1/4 teaspoon vanilla extract
1/4 cup chocolate chips

Preheat oven to 350°F.

Mix together the shortening, brown sugar, and granulated sugar. Add the tablespoon of beaten egg and vanilla and mix until combined. Add the flour, baking soda, salt, and cinnamon and mix until just combined. Stir in the chocolate chips.

Roll dough into four cookie balls and place them on a lightly greased cookie sheet (you can also bake them in two lightly greased tart pans, a muffin top pan, cupcake pan, whatever you desire). Flatten them slightly with your hand.

Bake for 12-15 minutes until golden brown. (The other neat thing about this recipe is that it is completely customizable. If you wanted to throw in butterscotch chips and almonds, or recee’s and chocolate chunks you could…each kid could sort of make thier own…I’m thinking this could be a fun playdate activity…)
